Goat's Milk Cheese "Mattonella"

Aging: 15 days

Size: rectangular 1,2 Kg

Features: It is a cheese produced introducing Penicillium candidum which develops on the surface giving the cheese the characteristic white skin. It’s a cheese able of great surprises, specially with long aging.

Tasting: It has a white skin, with tendency to proteolysis . The paste is compact and it has a light white colour. In the mouth you find it fresh, with a typical goat’s milk flavour.

Suggestions: We suggest to combine it whit Parrina Bianco Doc, but it goes well also whit a Sangiovese, Parrina Rosso Doc

Considerations: It is a cheese to be consumed fresh, in salads or you can grilled it
