Features: As often happens for the best products, this cheese was born by chance. The technique used is the same of the ripened sheep’s milk cheese, but in this case we process both the milks, the goat and the sheep one mixed together.

Tasting: It has a delicate and elegant flavour which represents the balance between the strong personality of sheep's milk and the elegance of the goat’s milk. It has a final spicy note.

Suggestions: We suggest to combine it with Parrina Rosso Riserva for its elegance. You can taste it also with honey, jams and wine jells.

Considerations: In this cheese the sheep’s milk and the goat’s milk valorise each other resulting in a variety of entirely new flavourings, different than the other ripened sheep’s milk cheeses that you can normally taste.
