Size: 1,7 kg. The cheese is wrapped in a guinea natural cloth and than packed in an elegant wooden box.
Features:
This is a ripened cheese produced using the milk that you find at the end of the lactation cycle ( more rich and tasty). During the harvest period the cheese is wrapped in Sangiovese and Merlot grape pomace. The grape pomace we use are highly selected by a dairy technician and a wine-cellar technician cause it is important to use the most scented ones.
The grape pomace we prefer to use are the Sangiovese and Merlot grape variety, the first one for its link with the territory and the second one for its elegance.
Tasting:
The surface is completely covered by the grape pomace, dried but in a compact crust with an intense violet colour.
When you cut the paste it appears compact and with a colour ranging from the ivory white to the straw yellow.
The paste melts in your mouth, it is sweet and with a slight hint of wine which goes from the surface to the heart of the cheese.
Suggestions:
We suggest to match it with Parrina Rosso Riserva or Radaia
Considerations:
This is the product of the great occasions. You can find it on the market only at the end of November. It is called “ Panettone Parrina”, thanks to its look so similar to the typical Italian Christmas cake “Panettone”.
This products reflects the soul of Parrina: it is a ripened sheep’s milk cheese of high quality aged in a precious grape pomace highly selected.
