Aging: 20-40 days

Size: 1,6 kg or 700 g

Features: This an artisan product obtained followings the ancient cheese traditions. It’s a middle-aged cheese, where you can appreciate an homogeneous and compact paste.

Tasting: The skin is thin and elastic; the paste is yellow more or less intense. It has a sweet flavour, characteristic of sheep’s milk. You can appreciate the typical milky sensations ( milk- butter) along with the vegetal ones ( grass, pasture).

Suggestions: We suggest to match it with Parrina Rosso. Moreover it goes well with a wide range of jams, wine jells and honey.

Considerations: It is a cheese that you can appreciate both fresh ( 10 days of aging) both seasoned ( 60 days)
