Features:
They are middle-aged cheeses, you can appreciate their homogeneous and compact paste.
Tasting:
The skin is thin and elastic; the paste is yellow more or less intense, the additional flavourings rucola or truffle are well distributed. It has a sweet flavour, characteristic of sheep’s milk, with the typical aromas of the added flavourings.
Suggestion:
We suggest to match it with Parrina Rosso.
Considerations:
The rucola used in this kind of cheese comes from Parrina’s fields and the truffle is in its natural state, as you can find it naturally, just preserved in salt water.
