The pecorino ( dry sheep's milk cheese) with pomace, better known as "panettone" Parrina (thanks to its look, so similar to typical Italian Christmas cake) is a ripened cheese made with the milk that you find at the end of the lactating period, more rich in proteins and fat, and therefore more fine and tasty.
This milk is available only from the second half of June to the first half of July , which is the period we produce the "panettone" in the artisan dairy of Parrina.
3 months of aging are followed by 2 months of maturing in pomace, to get the cheese ready for consumption during the Cristmast period!
The pomace used are carefully selected by a technician of the cellar and a technician of the dairy, who choose the pomace most fragrant and with the best consistency.
In particular the varieties of pomace used are Sangiovese and Merlot, the first for its strong character and the link with territory, the other for its elegance.
Pecorino with pomace is the product "of the great occasions" that reflects Parrina's soul: a ripened cheese of high quality,aged in precious grapes' skins highly selected.
Available on the market only in December, it is proposed in an elegant gift box, just as a particular Panettone!
