After adding to pasteurized cow's milk rennet and ferments, the curd is cut and left to rest. Parrina’s fresh stracchino waits seven days in a room dedicated to acquire the optimum consistency and the natural touch of acidity. The formation of serum seems natural as natural remains its slow maturation process.
White surface and white dough.
The smell is very intense with a hint of cream.
Soft texture and pleasant taste. Soft and gentle at the beginning and determined with a hint sour towards the end. It has a very soft consistency.
It is a simple and wondering cheese. Perfect for everyday meal, it is excellent with a glass of white wine Parrina Vermentino D.O.C and with a green or mixed salad. It's a creamy fresh cheese, consumed a lot in summertime and used as well as a pasta dressing or eaten alone with a tablespoon of Parrina extra virgin olive oil and a little bit of salt.
